Una dieta keto es una dieta muy baja en carbohidratos y con mayor contenido de grasa. Es muy similar a otras dietas bajas en carbohidratos.

En una dieta keto se comen menos carbohidratos, se mantiene un consumo moderado de proteína y puede que aumente la ingesta de grasa. La reducción de carbohidratos pone al cuerpo en un estado metabólico llamado cetosis, en donde la grasa (de tu cuerpo y de lo que comes) se consume para obtener energía.

Significado de “keto”

“Keto” en una dieta cetogénica se deriva del hecho de que permite al cuerpo producir pequeñas moléculas de combustible llamadas “cetonas”. Es una fuente alternativa de combustible para el cuerpo, que este usa cuando el azúcar en sangre (glucosa) escasea.

Cuando se consumen muy poco carbos o muy pocas calorías, el hígado produce cetonas a partir de la grasa. Estas cetonas sirven como fuente de combustible para todo el cuerpo, especialmente para el cerebro.

El cerebro es un órgano hambriento que consume mucha energía todos los días y no puede funcionar directamente con grasa. Solo puede funcionar con glucosa … o cetonas.

En una dieta cetogénica, todo el cuerpo cambia su suministro de combustible para funcionar principalmente con grasa; se quema grasa las 24 horas del día, los siete días de la semana. Cuando los niveles de insulina están muy bajos, la quema de grasas puede aumentar enormemente. Se vuelve más fácil acceder a la grasa almacenada en el cuerpo para quemarla.
